Lettuce Tacos with Turkey

Happy Taco Tuesday!

It’s Taco Tuesday! Tacos are among my favorite Mexican dishes- I love how fun they are to eat and how different they can be. Soft tacos, hard tacos, lettuce tacos, you name it and I’ll eat it!

I noticed I had leftover turkey taco mix from my last post, so dinner tonight was a no brainer. Lettuce tacos are a healthier (but still filling) version of traditional tacos, and are very easy to put together. As I mentioned, for this recipe I used leftovers I already had but these can be made with whatever filling you want- chicken, turkey, beef, pork, fish, shrimp, tofu- the list is endless.

Below is the recipe I posted before when I made the turkey taco mix earlier this week. I’ve modified it to fit this dish.

Timing:

  • Preparation: 5 minutes
  • Cook time: 20 minutes
  • Total Time: 25 minutes

Ingredients: Makes 4-6 servings

  • 1 Pound Ground Turkey Meat
  • 4-6 Lettuce Wraps (big leaves from a head of lettuce work too)
  • 1/2 Tablespoon Olive Oil
  • 1 (4oz) Can Diced Tomatoes
  • 1 Small Onion, chopped
  • 1/2 Red Pepper, chopped
  • 1/2 Yellow Pepper, chopped
  • 1/2 Orange Pepper, chopped
  • 1 Pinch Garlic Powder
  • 1 Pinch Oregano
  • 1 Pinch Chili Powder
  • 1 Pinch Cumin
  • 1 Pinch Taco Seasoning
  • 1 Cup Cheddar Cheese, shredded
  • 1 Cup Pico De Gallo (I used fresh store-bought pico de gallo but to make your own see below)
    • 1 Cup Chopped Tomato
    • 1/4 Cup Chopped Scallion
    • 1/4 Cup Chopped Cilantro
    • 1/2 Minced Jalapeno *(not required)
    • 2 Tablespoons Fresh Lime Juice
    • 1/4 Teaspoon Kosher Salt

Directions:

In a skillet, add the ground turkey and sprinkle with the taco seasoning, chili powder, cumin, garlic powder and oregano. Mix together well. Add the can of chopped tomatoes and let simmer for 20 minutes, occasionally stirring to break up pieces of turkey.

While the turkey mixture is simmering, chop up the onion and peppers. Saute in a separate skillet with olive oil for about 5 minutes. You can add some additional taco seasoning to this skillet. Once they are cooked, add the onions and peppers to the taco and tomato mixture and continue to let simmer while stirring occasionally.

When the turkey is no longer pink, take the taco meat and fill the lettuce wraps with the mixture. Top with Pico De Gallo and cheddar cheese. Enjoy!
