Healthy Breakfast Scramble

Start your morning off right!

For those of you who don’t already know, breakfast food is my all time favorite kind of food. I would eat breakfast for every meal and never get bored :D. My favorite breakfast dishes to make always include eggs. I think eggs are fantastic because they are so versatile and can be made in so many different ways, with so many different ingredients. I want to share my go-to breakfast that I make at least 5 times a week. It’s a simple and healthy breakfast scramble that can be adjusted to include all of your favorite veggies!

When I make my breakfast scramble, I like to pack it full of fresh veggies. My favorite fillings include onions, sweet bell peppers, spinach, tomatoes, mushrooms, avocados and of course, cheese. Feel free to add whatever veggies you like! The recipe below corresponds to the image above.

Timing:

  • Preparation: 5 minutes
  • Cook: 10 minutes
  • Total Time: 15 minutes

Ingredients: Makes 1 serving

  • 2 Whole Eggs, whisked
  • 2 Teaspoons Olive Oil or Cooking Spray
  • 1 Pinch of Ground Black Pepper
  • 1/2 Small Onion, chopped
  • 1/3 Red Bell Pepper, chopped
  • 1/3 Yellow Bell Pepper, Chopped
  • 1 and 1/2 Cups Fresh Spinach
  • 1/3 Cup Tomatoes, chopped
  • 1/4 Cup Goat Cheese, crumbled (feel free to use any cheese you like)

Directions: 

Heat a skillet with the olive oil or cooking spray and saute the onion and bell peppers until soft, about 2-3 minutes.

Saute onion and peppers

While the onion and peppers are cooking, whisk the eggs together  and add a pinch of black pepper. Gently pour the egg mixture into the skillet with the onion and peppers and use a spatula to mix the ingredients together. Let cook for another minute, occasionally tossing the ingredients together with the spatula.

Add eggs to the onion and pepper mixture

Add the chopped tomatoes to the skillet and continue to mix with the spatula. Add the fresh spinach and mix around until wilted.

Add tomatoes and spinach

Sprinkle the cheese on top of the mixture and let the cheese melt for about 2 minutes. Continue to mix the ingredients together with the spatula until the veggies are no longer firm.

Add the cheese and let it melt on top

Turn the heat down and let the skillet sit for about a minute. Serve and enjoy!
