Shrimp Fried Cauliflower Rice

Tastes just like traditional fried rice!

It’s almost the weekend! Fuel your body up to conquer the rest of the week with this healthy take on the classic shrimp fried rice. Instead of using regular rice, substitute it for cauliflower rice and you’ll cut at least a third of the calories out! You’re probably aware of the cauliflower rice trend that has been floating around every recipe site lately. Cauliflower rice is easy to make and you’ll feel just like you’re eating regular rice. To make it, break off pieces from a head of cauliflower and simply toss it in the food processor. If you do not have a food processor, grocery stores like Wegmans sell fresh packages of cauliflower rice that have already been chopped up for you.

Fried rice is a popular choice for take-out. This time, why not try making it at home? While this recipe has shrimp, you can also make fried rice with chicken, pork, steak and tofu!

Timing:

  • Preparation: 10-15 minutes (depending on if you are chopping the cauliflower yourself)
  • Cook time: 10 minutes
  • Total time: 20-25 minutes

Ingredients: Makes 3-4 Servings

  • 1/2 Pound of Peeled, Deveined Shrimp
  • 1 Teaspoon Ground Ginger, minced
  • 1/4 Teaspoon Crushed Red Pepper
  • 1/2 Cup Red Bell Pepper, chopped
  • 1/2 Cup Green Onions, chopped
  • 1/2 Cup Yellow Onion, diced
  • 1 Clove Garlic, minced
  • 4 Cups Cauliflower Rice
  • 1 Large Egg
  • 1 Tablespoon Water

For the sauce:

  • 1/3 Cup Extra Virgin Olive Oil
  • 1/4 Cup Balsamic Vinegar
  • 2 Tablespoons Low Sodium Soy Sauce
  • 1/2 Teaspoon Garlic Powder
  • 2 Tablespoons Honey
  • 2 Tablespoons Ginger, minced
  • 1 Teaspoon Sesame Oil

Directions: 

Whisk together all the ingredients for the sauce in a small bowl. Combine the sauce, shrimp, crushed red pepper and ginger in a large bowl and mix together. Make sure all the shrimp are evenly coated. Let the sauce soak in for 5 minutes.

Chop up the green onion, yellow onion and red bell pepper. In a large saucepan, sauté the onions and peppers together with the minced garlic. Cook for 3 minutes.

Add the shrimp to the pan and continue to sauté for 5 more minutes until the shrimp is fully cooked.

Add the cauliflower rice to the pan along with any remaining sauce you have leftover. Mix together the ingredients until all the rice is coated in sauce. Stir fry for 2-3 minutes.

Make an opening in the center of the rice and crack and egg in the middle. Scramble the egg until it’s evenly distributed within the rice.

Once the ingredients are evenly distributed, serve and enjoy!
